aimed to inform students about general properties of chemical preseratives and antimicrobial compounds, toxicological evaluations, classifications, application areas in food industry and legal regulations.

Definition of chemical preseratives and antimicrobial compounds; Sodium Benzoate, parahydroxybenzoic acid esters (parabens), sorbic acid and its salts, propionic acid and its salts, sulfur dioxide and sulfites, acetic acid and acetates, nitrites and nitrates, diethyl polycarbonate (DEPC), antibiotics, ethylene and propylene oxide and other compoundsSodium Benzoate, parahydroxybenzoic acid esters (parabens), sorbic acid and its salts, propionic acid and its salts, sulfur dioxide and sulfites, acetic acid and acetates, nitrites and nitrates, diethyl polycarbonate (DEPC), antibiotics, ethylene and propylene oxide and other compoundsusage purposes; impact mechanism; application areas in food; legal regulations and their toxicological evaluations; classifications.
